You'll probably wind up stripping the fitting on the brake line too. Then what, replace the whole line back to the master cylinder? There must be a dozen things you could do to get that bolt out. Take off the caliper and get it into a position where you could cut off the bolt head with a hack saw or cut off wheel on a dremmel tool, drill it out, us vise grips, use a smaller socket and beat it on etc.. If getting out a stripped bolt is beyond your capabilities, then you might want to consider letting a mechanic do the job. No you don't, take your angle grinder and zing the head off the banjo
bolt. You already have a new caliper, right? just stop once you see copper so you don't end up having to replace the hose.
