Default 95 Chev. Tahoe 5.7L

I ahve developed an engine proublem. Driving at Highway speeds 65+,
while eccelortating. At times my engine loads up, as if the cat is
plugged, Mods done are- K&N air filt. direct fit headers, high flow
cat,high flow muffler, Supper chip. new quality dist.cap roter MSD plug
wires Bosh platinum plugs and High output coil. I'v had this proublem
before the ign. tune up and the exhoust mods.
I can't think of a cure.
Suggestions please.
